I have gotten completely hooked on this easy breakfast! So many friends recommended trying overnight oats to me as a convenient and healthy breakfast, and they were right. You can make them any flavor combination you come up with, but my favorite is oats with coconut milk, flax seeds, chia seeds, pumpkin seeds, cranberries and brown sugar.
If you want to try (and I think you should!) before going to bed just fill a mason jar about 1/3 full with dry oats, 1 tbsp of flax seeds and 1/2 tbsp chia seeds then pour in an equal amount of coconut milk (just eye ball it, no one wants to dirty another dish right before bed). Seal the jar and set it in the fridge overnight and in the morning you'll have a creamy oatmeal breakfast ready to be topped with nuts/seeds/fruit! I especially loved this breakfast when working the early morning shift for having one less thing to do in the morning before sneaking out the door.
^^Oh yah, and Emery approves. But honestly, there aren't many foods she doesn't approve of as long as I'm eating them also! ^^
