Whole Wheal Walnut Pancakes Recipe:
- 3/4 cup old fashioned oats (ground until fine in a blender or food processor)
- 3/4 cup whole wheat flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- pinch of salt
- 3/4 cup skim buttermilk
- 1/2 cup skim milk
- 1 egg
- 2 tbsp. apple sauce (or oil)
- 2 tbsp. brown sugar
- 2 tsp. white sugar
- 2 tbsp. chopped walnuts (plus 2 more tbsp. walnuts for topping)
Combine the dry ingredients together in a medium size bowl and the wet ingredients in a smaller bowl. Add the wet ingredients into a well in the middle of the dry ingredients and combine quickly with a few strokes of the spoon. Do NOT overmix or the pancakes will be dry. Toss in the wal-nuts. Heat oil in your frying pan over medium low heat and heat the pancakes until bubbles form, flip and cook the other side. You know the drill.
These pancakes are so filling (thanks to the ground oats) and delicious (thanks to the walnuts and brown sugar) that you won't even believe they're healthy, atleast they were healthy until I smothered them in the maple syrup. I just can't help it, I'm a maple walnut icecream kinda' gal and this is the closest thing to that famous summertime treat that you can justify eating for breakfast.. 3 mornings in a row.
