As fond of the outdoors as I am, and as exciting as all the adventuring, hiking, kayaking, rafting, horseback riding (you get the point..) experiences I've had have been, there is just something about crafting, baking and creating that gets my heart going. Husband may not understand this, but he certainly knows how to appreciate it and bring out the best in me through it. After all, it was he who urged me to start this blog and you may be surprised to know that he helped compose many of the photo's on here, if not photographed himself (such as all of the photos of me). He continually encourages me to try different projects (especially edible endeavors) and gives me his time and attention as I blabber on about ideas and dreams, paper and plants, recipes and... okay, I won't put you through all the blabber.
The other night he made my heart really flutter as I was too sleepy to bake and he was having a serious peanut butter cookie craving. So he asked me to find his favorite recipe and set off to work in the kitchen. They turned out delicious and he photographed them beautifully. I will share the recipe, but it really is husband giving you this post.
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter, softened
- 1/2 cup smooth peanut butter, at room temperature
- 2/3 cup firmly packed brown sugar
- 1/2 cup white sugar
- 2 large eggs
- 1 tsp vanilla
- 1/2 cup chopped peanuts
Preheat oven to 350. Line 2 cookie sheets with parchment paper.
In a bowl, combine the flour, soda and salt, then set bowl aside. In a larger bowl mix together the peanut butter, sugars and butter. Mix until well blended, then add in the eggs and vanilla. Continue mixing on low speed. Slowly add the flour while beating on low speed until just incorporated.
Place heaping spoonfuls of dough onto baking sheet, spaced approximately 3 inches apart. Sprinkle chopped peanuts ontop and press down lightly with fingers. Bake 10-12 minutes, until cookie tops are evenly golden. This works best if you bake only one sheet at at time.
They'll keep for a couple days, but we doubt you'll be able to resist them for that long!
