Hubby and I eat most of our meals outside of the house. I always wake up early to have a slow breakfast at home before leaving in the morning, and he usually grabs something while running out the door, and when we leave our backpacks are filled with lunch, snacks and sometimes supper. Lunches are usually eaten between classes and sometimes we even get to sit together and make a date out of it, which is sweet and something I'll miss! Snacks are had in the car or in the classroom usually, and suppers are often eaten at work. Because of this, I've gotten really into big batch cooking and having food ready in tupperware containers. It's our version of fast food, to go!
The savory stuff:
^^ Sandwiches (this week: turkey club with 2 slices of bacon, 2 slices of cheese, spinach and mayo), salad (this week: greek salad with cucumber, tomato, peppers, feta and olives), and soup (this week: turkey vegetable rice) ^^
^^ Fruit salad (this week: watermelon, pineapple, strawberries and kiwi), and these delicious yogurt parfaits that are kind of a splurge financially but we love them! ^^
^^ Cookies (this week: oatmeal raisin), trail mix (macademia nuts, almonds, pecans, cashews, craisins, dried appricot and some dark chocolate pieces) and then we always throw an apple and orange into our bags ^^
Making quick meals ahead of time has saved us this school year, especially right now as we're wrapping up the semester and it's crunch time for assignments and essays!
