This has been a really hard week. Well, almost 2 weeks now. It's all a blur of sleep deprivation and 3 midterm exams and coughing my lungs out and chicken noodle soup. I've been the disruptive girl in class coughing the first 30 minutes through because hauling my backpack through the hallway is just too much for my lungs to take, so running has been out of the question which is downright depressing. It's track provincials this weekend and I'm preparing myself to make the decision not to go, which makes me cry! But I'm losing weight when I should be gaining and runnig on no sleep at school all day just isn't cutting it anymore, especially without coffee in the AM. Which is why a good breakfast has become essential. My dad swears by organic walnuts, and has prescribed me 3 whole nuts a day during pregnancy and possibly the rest of my life, haha. So I'm finding new ways to eat them and this oatmeal is a definite winner!
I just made two portions of quick oats boiled with water, tossed in some chia seeds and flax seeds while it was sitting covered on the stove over low heat to soften the seeds, then added maple syrup, brown sugar, cinnamon, milk, apples and exactly 3 walnuts (love you dad!) on top.
Good breakfasts make bad days just a little bit better.
