Spaghetti Squash is a tasty, low carb alternative to change up your favorite dinner. My Granny grows a lot of spaghetti squash and keeps us stocked up into the winter. It's tasty and super easy to cook!
1. Preheat your oven to 375 degrees and cut your squash into quarters. Remove the seeds.
2. Oil a baking pan with olive oil, place the squash skin side down onto the pan, spray olive oil onto the squash as well, then cover loosely with aluminum foil. Bake for 45 minutes, or until the meat of the squash is soft enought to be punctured with a spoon. ^^
3. Start the spaghetti sauce simmering on the stove. I made mine with garden tomatoes that had just ripened, so it's a double harvest feast! ^^
^^ Scrap the meat of the squash out using a fork and shred as you scrape. The strands of spaghetti squash look just like spaghetti! ^^
Serve and enjoy. Have cake for dessert since you had such a low carb dinner ;)
